My green fish curry served with Jasmine rice, coriander leaves and fried shallot is a solid favourite for me as the weather begins to cool. It is very simple dish to cook that delivers a wallop of flavour. I make my own curry pastes and keep an ample supply stored in my freezer, but if thats too hard you could just as easily use your pick of store bought pastes.

My husband Paul grew up eating fresh caught and cooked school prawns. Although they are laborious to peel, he has now convinced me that they are the sweetest and tastiest prawns you can eat. This salad was inspired by a kilo of ‘as fresh as you’ll find’ school prawns, that we were fortunate enough to purchase from a local fisherman just cooking his morning’s catch on the shores of Lake Macquarie last summer. This makes a perfect Christmas Day dish!

Mr G caught flathead in numerous places on our road trip adventures - we were flat-out eating flathead. We stayed with friends on the East Coast of Tasmania, who when they aren’t feeding their sheep escape to ‘the shack’ at Coles Bay to catch flathead by the boat-full and cook them up in a crispy batter for breakfast.
